FIELD OF SCIENTIFIC INTEREST

Oxidative stress induced by abiotic factors on plants from the Fabaceae family. Analysis of antioxidant enzymes, low molecular weight antioxidants and detection of reactive oxygen species in plant tissues exposed to abiotic stress. Analysis of the composition of polyphenol compounds present in plants of economically significant species of the Fabaceae family. Investigation of transformations of polyphenols compounds during in vitro digestion in the presence of complex nutritional matrices and influence on their biological activities. Enzymes of bacteria from the genus Lactobacillus involved in the degradation of polyphenol compounds and proteinase inhibitors in plant material - application in the production of silage starters.
